Lower Level Update

Eddy and I have slowly but surely worked on flipping our house (DIY style, of course). Over the course of 5 years we have remodeled the kitchen, the deck, the bathroom and most recently we’ve been working on a lower-level makeover. We live in a split level home built in the 60s and the lower level is sort of like a basement, but sort of not. We actually have a real basement, that is entirely below ground, in addition to this space. The lower level has a half bathroom and about 400 sq. ft. of living space, so it’s definitely a huge addition to our current living space. When we started planning for the lower-level redo, we knew we wanted to do it on a budget. We chose not to remove all of the paneling on the walls, but rather to just paint it white. The floor was a difficult choice because carpet would have been the least expensive option, but carpet and humidity don’t do well together. In the end we decided to use laminate flooring that literally just sticks together. The drop ceiling was another item to tackle, it was dirty and old and couldn’t be salvaged. Instead of replacing the drop ceiling with another drop ceiling we chose to use vinyl lattice. The lattice looks nice and I think it will be great with the “wood” floors, but it has been a challenge to get it all up into place. Thankfully we figured out some makeshift scaffolding that we used to hold the tiles in place while simultaneously securing. So here are some of the photos...

A Twist on Bacon and Eggs

OK, so I have a real love/hate relationship with eggs. I love that they are healthy and full of protein and omega-3s. I love that they are low-carb and good brain food at the same time. God knows I need all the brain food I can get. Despite the fact that eggs are all around great for me, I’m just not really an egg person. I can’t stand how they get crispy and golden when fried. I can’t stand peeling boiled eggs. Sometimes just the smell of them makes me gag. Yet, I still eat eggs for breakfast at least 3 or 4 times a week. It’s one of those things I just force myself to do. So in order to get myself to eat eggs, I tend to disguise them with a mix of vegetables. As you may have observed, I also like making things in big batches to be eaten for days. So, this is what I came up with this week, a twist on bacon and eggs. {Rough} Instructions: Line a cookie sheet with with aluminum foil and preheat oven to 400 degrees.Get two green peppers and lay them on their sides. Cut off the top and bottoms. Slice peppers into thick rings. I think each pepper made 3-4 rings. Clean out the seeds in the centers and lay out rings on cookie sheet.Crack an egg into each ring and rip apart one slice of bacon, place bacon halves across on top. It’s always easy to point a finger and accuse people who look like they “have it easy.” Actually, there are many instances in my own life that I can remember pointing the “easy” finger. I used to think that stay at home moms had it easy. I thought that people who sat in offices staring at a computer monitor all day had it easy. I thought my dog walker had it easy. But when I really think about it and reflect on the word “easy,” I think about moms who want to tear their hair out because they’ve been cooped up all day (or all week) with small children. I think about my husband in his former office job, working his hardest only to get nowhere. I think about walking my own dog and how insane she becomes when she sees a squirrel and I remember how much I dread walking her myself. I will admit, I do still think there are some people who have it easy. I’m not going to be unrealistic and claim that our burdens are equal, because they most definitely are not. I will tell you that the vast majority of people you encounter on a daily basis don’t have it easy. OK? OK. In the past twenty four hours I’ve done my fair share of lesson planning, paperwork, and emailing. I’ve been able to do so from the comfort of my own home, which is fortunate, so maybe I’m lucky in that regard. But I will...

Cheap and delicious- Lentils and Rice

In order to be healthy and save money, Eddy and I have been making massive amounts of cheap and delicious foods. One of these foods is lentils and rice. A bag of dried lentils is under $2. Good quality wild rice is about $5 a bag. Mix these two with some frozen veggies, sauteed onion and spices and you’ve got yourself meals for days. The great thing about lentils is that although they aren’t visually appealing, they are so versatile. You can really flavor them however you like. We really love curry and coconut milk, so last week these were the two flavor combos we mixed in. I’m not into posting step by step, intricate recipes (I hate following recipes!), but if you feel you need a recipe, use Pinterest. I’m pretty sure you can find how-to tutorials for just about everything on that site. After eating lentils and rice for four days straight, we decided to use some of the money we saved to splurge on a fun night out. We went to Jackie’s Waterplace Restaurant in Downtown Providence. Still trying to stay {healthy} I ordered some miso soup and seaweed salad. Both of these are wonderfully healthy foods. If you don’t know about either of them, you might be living under a rock. Death by Chocolate- It’s a Piece of Cake

This is a very beautiful slice of chocolate cake. It has clean edges and smooth lines and looks like it was made from some type of quality chocolate. The person who made this cake clearly cares about good food. I also care about good food and quality ingredients. However, tonight, I wolfed down a piece of chocolate cake from Gregg’s Restaurant. Gregg’s is the type of place you go to if you want a huge quantity of food, but don’t really care about the quality. I didn’t think to take a photo of my own slice, but it  was huge with lots of frosting and chocolate chips. It was delicious and disgusting all at the same time. It was probably the equivalent of 30 weight watchers points. You know what though, sometimes you just need a sloppy piece of cake in your life. Sometimes cake is the answer. Right?
