In order to be healthy and save money, Eddy and I have been making massive amounts of cheap and delicious foods. One of these foods is lentils and rice. A bag of dried lentils is under $2. Good quality wild rice is about $5 a bag. Mix these two with some frozen veggies, sauteed onion and spices and you’ve got yourself meals for days. The great thing about lentils is that although they aren’t visually appealing, they are so versatile. You can really flavor them however you like. We really love curry and coconut milk, so last week these were the two flavor combos we mixed in.
I’m not into posting step by step, intricate recipes (I hate following recipes!), but if you feel you need a recipe, use Pinterest. I’m pretty sure you can find how-to tutorials for just about everything on that site.
After eating lentils and rice for four days straight, we decided to use some of the money we saved to splurge on a fun night out. We went to Jackie’s Waterplace Restaurant in Downtown Providence. Still trying to stay {healthy} I ordered some miso soup and seaweed salad. Both of these are wonderfully healthy foods. If you don’t know about either of them, you might be living under a rock. Again, I urge you to use Pinterest. For my entree I ordered mango sushi. It was almost too pretty to eat. Warm soup and sushi was a great way to wrap up a long week.
